One of our go-to mid week dinner recipes is this veggie loaded spaghetti bolognese. We absolutely love this recipe as you can make a batch of it and include it as your lunches for the week. Makes:Â 4 servings

Ingredients
- 500g minced meat
- 1 Brown onion
- 2x zucchini
- 1x eggplant
- 2x carrots
- 2x celery stalks
- 8 mushrooms
- 2 cups Vetta pasta
- 2 crushed Garlic cloves
- Fresh basil
- 1 tbs Balsamic glaze
- 2x can Diced tomatoes
- Leggos Tomato paste
- Italian herbsÂ
MethodÂ
1. Firstly brown mince, seasoning with salt and pepper
2. Add onion, garlic and mix to combine
2. Add all vegetables: eggplant, carrot, celery and zucchini, mushroom and season again with salt and pepper and mix well
3. Cover with lid to steam vegetables for a couple of minutesÂ
4. Add diced tomatoes and tomato paste and a dash of water if you feel the mixture is too thick
5. Add Italian herbs and balsamic vinegar and fresh basilÂ
6. Let mixture simmer and reduce for 30-40 minutes depending on thickness desired.Â
7. Serve with pasta and ENJOY!
